VALLESANA CUISINE


Na-Ha's haute cuisine is prepared from the ground up. With fresh ingredients and the highest quality produce grown in the bountiful Valle de Bravo region and surrounding areas, its dishes are a natural gift that avoids packaged and processed foods, preserving the nutrients and traditional Mexican flavors.

 

The rustic preparation of trout, sea bass, duck, eggplant, mushrooms, red onion, and cuts of meat, as well as the rustic presentation of the dishes, evokes local tradition with country flavors and memories of the province, achieving a FIVE-STAR culinary standard.

Socrates Alonso

CHEF

He was born in Atlixco, Puebla, immersed in the state's great culinary tradition. As a child, his grandmother taught him to make pipián and mole in a traditional smokehouse, creating dishes with a love of the land. With his mother, he discovered everyday cooking, prepared with love and respect for the ingredients.


He studied gastronomy while his culinary career has continued to grow, working in hotels, restaurants, and exhibition centers in Puebla and Playa del Carmen, and as executive chef at a Michelin-starred boutique hotel in San Miguel de Allende.



For Socrates, his driving force is the joy of serving and awakening happiness, enjoyment, and connection through his cuisine. Since 2024, he has been creating gastronomic experiences rooted in the earth and consciousness at El Santuario.
